Carrot Loaf
3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
4 eggs
2 cups sugar
1 1/2 cups corn oil
1 teaspoon vanilla
2 cups uncooked carrots, grated
1 cup walnuts, chopped
1 can pineapple, crushed
Preheat oven to 350 degrees.
In large bowl sift together flour, baking soda, baking powder, salt and cinnamon.
In separate bowl, beat together eggs and sugar until pale yellow. Beat in oil and vanilla.
Stir in sifted ingredients. Fold in carrots, walnuts and pineapple.
Butter and gently flour a 10 inch bundt pan or loaf pan. Pour batter into pan.
Bake 1 hour and 10 minutes or until cake tester comes out dry.
